Ingredients

For the brownie cookies

  • 1 box brownie mix (mixed per package instructions)
  • cup all-purpose flour

For the peanut butter filling

  • ½ cup creamy peanut butter

For the chocolate topping

  • 1 cup semi-sweet chocolate chips (melted)

Instructions

To make the brownie cookies

  • Preheat the oven to 350 degrees.
  • Make the brownie batter per package instructions, then add ⅓ cup of all-purpose flour. Mix until combined.
  • Use a small cookie scoop (or spoon) to scoop the batter onontoto a cookie sheet lined with parchment paper.
  • Bake for 18-20 minutes or until the tops of the cookies begin to crack.
  • Remove them from the oven and use the back of a spoon or your thumb to make small indents on the top of each cookie. Do this while they are still warm, then allow them to cool to room temperature.

How to add the topping to the cookies

  • Fill a piping bag or Ziploc bag with peanut butter and cut a 1-inch tip in the corner (or tip) of the bag.
  • Squeeze a dollop of peanut butter over the center of each cooled cookie (1-2 tablespoons of peanut butter per cookie).
  • Freeze the cookies for about an hour.
  • Melt the chocolate chips and spoon a dollop of chocolate over the top of the frozen cookies. Use the back of a spoon to spread it throughout the top of the cookie, completely covering the peanut butter.
  • Allow the chocolate to set, then enjoy!
