These Easy Buckeye Brownie Cookies are made using boxed brownie mix, so they only have 5-6 ingredients total!

  • Boxed Brownie Mix: batter should be mixed per package instructions. You can use any brand, but I love any Ghirardelli brownie mix best (like this one)
  • All-purpose flour: to add to the brownie mix so that they maintain a cookie shape
  • Peanut butter: any kind, natural peanut butter will be more runny and lead to a messier cookie
  • Chocolate chips or baking chocolate: used for topping the cookies. I prefer semi-sweet, but any kind of chocolate works

How to make Easy Buckeye Brownie Cookies

These Easy Buckeye Brownie Cookies can be made by following three simple steps

  1. Mix together the brownie batter (don’t forget to add the extra flour!) and bake the cookies
  2. Add the peanut butter topping
  3. Spread chocolate over the top of the cookies

Preheat your oven to 350 degrees. Make the brownie batter per package instructions, then add ⅓ cup of all-purpose flour. Mix until combined.

Use a small cookie scoop (or spoon) to scoop the batter onto a cookie sheet lined with parchment paper, then bake for 18-20 minutes or until the tops of the cookies begin to crack.

Remove them from the oven and use the back of a spoon or your thumb to make small indents on the top of each cookie. Do this while they are still warm, then allow them to cool to room temperature.

Fill a piping bag or Ziploc bag with peanut butter and cut a 1-inch tip in the corner (or tip) of the bag.

Squeeze a dollop of peanut butter over the center of each cooled cookie (1-2 tablespoons of peanut butter per cookie), then freeze the cookies for about an hour or until the peanut butter hardens.

Melt the chocolate chips and spoon a dollop of chocolate over the top of the frozen cookies. Use the back of a spoon to spread it throughout the top of the cookie, completely covering the peanut butter.

Allow the chocolate to set, then enjoy!
