Method
To make the Triple Chocolate Pancakes
- In a medium-large bowl, whisk together dry ingredients (flour, cocoa powder, sugar, baking powder, salt).
- Add in all of the wet ingredients (oil, eggs, chocolate milk, vanilla extract) and beat well (using whisk or electric mixer).
- Add in chocolate chips and incorporate well.
- Heat a large skillet or frying pan and grease it well. Pour large round dollops over the heated pan to create pancakes (⅓-½ cup of batter). Cook the first side for 30 seconds- 1 minute or until the edges and middle begin to bubble. Flip over and cook the other side.
- Cover the pancakes with chocolate ganache, frosting drizzle, syrup and/or your favorite fruits and enjoy!
To make the chocolate ganache
- Use the microwave or stove to heat heavy cream until it is just about to boil.
- Gently stir in chocolate chips. Stir constantly until the mixture is smooth. Drizzle over the top of your pancakes.
To make the frosting drizzle
- Combine powdered sugar, vanilla and 2 tablespoons of water or milk. Mix well with whisk or fork.
- Add additional tablespoons of water or milk to reach desired consistency. Drizzle over the top of your pancakes.
