Ingredients
  

For the crust
  • 9-inch graham cracker crust store bought or homemade
For the cheesecake layer
  • 8 ounces cream cheese softened
  • ¼ cup granulated sugar
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
For the cherry layer
  • 1 can Lucky Leaf Premium Cherry Fruit Filling 21 ounces
For the topping
  • whipped cream topping store bought or homemade

Equipment

  • Hand or stand mixer
  • Measuring cups and spoons
  • medium mixing bowl
  • silicone spatula
  • piping bag and tip (optional)

Method
 

To make the cheesecake layer
  1. Open your store-bought graham cracker crust and set it aside (or make a homemade one, suggested recipe is above).
  2. Add the softened cream cheese to a medium mixing bowl and use a hand or stand mixer to beat it until smooth.
  3. Add the sugar, beat until smooth and scrape down the bowl.
  4. Finally, add the vanilla and heavy cream. Beat the mixture until it is light anand fluffy (1-2 minutes).
  5. Evenly spread the cheesecake mixture throughout the graham cracker crust.
To assemble the rest of the pie
  1. Next, spread the Lucky Leaf Premium Cherry Fruit Filling evenly over the cheesecake layer.
  2. Add whipped cream over the top, as desired, and then let it set in the fridge for at least 20 minutes before serving.
