Preheat your oven to 350 degrees (325 degrees is using convection bake)
Grease and line a standard (9inx5inx3in) loaf pan with parchment paper, or grease well. Set aside.
Using a hand mixer or a stand mixer fitted with the paddle attachment, cream the softened butter and sugar for 1-2 minutes or until fluffy. Scrape down the bowl once complete.
Add the ripe bananas and mix well (the mixer will mash the bananas for you).
Add the eggs and vanilla extract. Mix well, then scrape down the bowl.
Add the baking soda and salt. Mix well.
Add the flour and mix until well combined. Scrape down the bowl once complete.
Set the mixture aside while you make the filling.
