Baked Vanilla Cake Donuts

- 2 cups all-purpose flour sifted or spooned and leveled
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon ground nutmeg
- 1 teaspoon salt
- ¾ cup buttermilk substitution: add 2 teaspoons vinegar to a ¾ measuring cup, fill the remainder with milk
- 2 large eggs
- 2 tablespoons oil vegetable or canola oil recommended
- 1 teaspoon vanilla extract
Cinnamon Sugar Coating
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
Chocolate Icing
- 1½ cups powdered sugar
- 1 tablespoon corn syrup
- ¼ cup cocoa powder
- ¼ cup water add additional teaspoons of water until you reach desired consistency
Vanilla Icing
- 1½ cups powdered sugar
- ¼ cup milk add additional teaspoons of milk until you reach desired consistency
- 1 teaspoon vanilla extract
- 1 tablespoon corn syrup
Preheat oven to 375 degrees.
Thoroughly grease donut pan.
Stir flour, sugar, baking powder, nutmeg and salt together, then sift. Or measure flour by spooning and leveling in measuring cup, then whisk together dry ingredients.
Stir in buttermilk, eggs, oil and vanilla. Beat until combined.
Fill each donut well ¾ full.
Bake for 10-12 minutes, or until the donut begins to brown on the edges.
Immediately invert on to cooling rack and let cool for 5-10 minutes.
Create desired donut topping.
If coating in cinnamon and sugar, immediately toss them in the mixture upon taking them out of the oven.
If adding icing, allow the donuts to cool then dip the top of the donut in the icing and top with sprinkles or other candies.
