Baked Apple Cider Donuts

For the apple cider donuts
- 1½ cups apple cider
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1½ teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- 2 tablespoons vegetable or canola oil
- 1 egg
- ½ cup brown sugar packed
- ½ cup granulated sugar
- ½ cup milk
- 1 teaspoon vanilla
For the sugar coating
- ¾ cup granulated sugar
- 1 teaspoon cinnamon
To make the apple cider donuts
Preheat the oven to 350 degrees.
Pour apple cider into a saucepan and bring it to a boil. Once boiling, reduce the heat so that it continues to simmer. Leave it on a simmer for ~15 minutes, or until the cider has reduced to half its volume (¾ cup). Remove from heat and allow it to cool.
Pour all of the dry ingredients into a medium-large mixing bowl (or a stand mixer)(flour, baking soda, baking powder, salt, cinnamon, nutmeg, brown sugar and sugar). Lightly whisk the ingredients together.
Add oil, milk, egg and vanilla. Mix the ingredients until combined.
Add the apple cider and mix until combined.
Thoroughly grease your donut pan.
Use a spoon or a piping bag to pour the batter into the donut pan, filling each cavity ~¾ full.
Bake them for 15-20 minutes, or until the edges and bottom have browned.
To add the sugar coating
In a small-medium bowl, mix together the sugar and cinnamon reserved for topping the donuts.
Toss the donuts in the mixture immediately upon removing them from the oven.
Place the donuts on a pan or cooling rack. Enjoy at room temperature.
