To make the apple cider donuts
- Preheat the oven to 350 degrees.
- Pour apple cider into a saucepan and bring it to a boil. Once boiling, reduce the heat so that it continues to simmer. Leave it on a simmer for ~15 minutes, or until the cider has reduced to half its volume (¾ cup). Remove from heat and allow it to cool.
- Pour all of the dry ingredients into a medium-large mixing bowl (or a stand mixer)(flour, baking soda, baking powder, salt, cinnamon, nutmeg, brown sugar and sugar). Lightly whisk the ingredients together.
- Add oil, milk, egg and vanilla. Mix the ingredients until combined.
- Add the apple cider and mix until combined.
- Thoroughly grease your donut pan.
- Use a spoon or a piping bag to pour the batter into the donut pan, filling each cavity ~¾ full.
- Bake them for 15-20 minutes, or until the edges and bottom have browned.
To add the sugar coating
- In a small-medium bowl, mix together the sugar and cinnamon reserved for topping the donuts.
- Toss the donuts in the mixture immediately upon removing them from the oven.
- Place the donuts on a pan or cooling rack. Enjoy at room temperature.
