    Sprinkle Bundt Cake

    This Sprinkle Bundt Cake is perfectly moist and flavorful! It tastes like birthday cake in the form of a bundt. This cake is the perfect Easter or Spring dessert.

    Quick Tips

    • Make sure to grease your bundt pan well! If you’re using a non-stick spray, always use a baking flour-based spray. Click here to see other ways to properly grease a bundt pan.
    • Be sure you are using a 12 cup bundt pan. You can use any bundt design!
    • You can top this Sprinkle Bundt Cake with cream cheese frosting or a chocolate drizzle as well. Add crushed candies or more sprinkles to decorate the cake more.

    Equipment

    • Hand or stand mixer
    • Large and medium sized mixing bowl
    • Measuring cups and spoons
    • Silicone spatula
    • 12 cup bundt pan: I prefer the Nordic Ware 12 Cup Formed Bundt
    • Nonstick baking spray or shortening
    • Cooling rack

    Ingredient Notes

    • Canola or vegetable oil: only use neutral oil (NO olive or avocado oil, etc.)
    • Granulated sugar
    • Buttermilk: make your own buttermilk by adding 1 tablespoon of vinegar to a 1 cup measuring cup and filling the rest with milk. Stir and let sit for 5 minutes before adding it to the batter
    • Eggs: room temperature eggs are recommended (submerge the un-cracked eggs in warm water for 5 minutes)
    • Vanilla extract: I always recommend using pure extracts for best flavor!
    • Almond extract: omit this if you don’t like the taste
    • All-purpose flour
    • Baking soda
    • Baking powder
    • Salt
    • Sprinkles: any colored sprinkle mix will work! Use additional sprinkles for topping the cake, if desired

    How to make Sprinkle Bundt Cake

    This Sprinkle Bundt Cake is very simple to make and can be broken down into three simple steps.

    1. Make the cake batter
    2. Prepare the bundt pan and bake the cake
    3. Add the icing

    How to make the cake batter

    Preheat the oven to 350 degrees.

    In a large bowl (or a stand mixer), mix sugar and oil. Then add buttermilk, eggs, vanilla and almond extract.

    In a separate bowl, whisk together flour, baking soda, baking powder and salt.

    Add the dry ingredient mixture to the wet ingredients, 1 cup at a time, mixing well after each addition. Scrape down the bowl once complete.

    Gently fold in the sprinkles and mix until well incorporated. Do not over-mix as the color in the sprinkles may begin to bleed.

    How to prepare the bundt pan and bake the sprinkle bundt cake

    Thoroughly grease your bundt pan using a flour-based baking spray or by brushing with shortening. Click here for bundt tips and tricks.

    Pour the batter into the greased bundt pan and pat it on the counter a few times to release any bubbles in the batter.

    Bake for 45-60 minutes or until a toothpick inserted in the center of the cake comes out clean.

    Remove the cake from the oven and allow it to cool for 10-15 minutes before turning it out of the pan.

    After 10-15 minutes, place a cooling rack over the top of the pan and turn the pan over to release the bundt cake.

    Allow the cake to cool completely before adding the icing.

    How to add the icing

    Add the powdered sugar, milk and vanilla extract to a medium mixing bowl and stir with a spoon or fork until fully incorporated. Add additional powdered sugar (or milk) until you reach the desired consistency (the mixture should be spreadable but not too watery).

    For the bundt cake
    • ¾ cup vegetable or canola oil
    • 1¾ cup granulated sugar
    • 1 cup buttermilk *see ingredient notes for simple substitution
    • 4 eggs
    • 1 tablespoon vanilla extract
    • 1 teaspoon almond extract
    • 3 cups all-purpose flour
    • 1½ teaspoons baking powder
    • ½ teaspoon baking soda
    • 1 teaspoon salt
    • 1 cup sprinkles
    For the simple icing
    • 3 cups powdered sugar
    • 1 teaspoon vanilla extract
    • ⅓ cup milk or heavy cream
    For alternative icing option: cream cheese frosting
    • ¼ cup butter softened
    • 4 ounces cream cheese softened
    • ½ teaspoon vanilla extract
    • 2 cups powdered sugar

    To make the cream cheese icing (alternative topping option)
    1. Cream the softened cream cheese and butter with a hand or stand mixer until smooth.
    2. Add the vanilla extract and powdered sugar. Mixing until well-combined.
    3. I recommend heating the frosting in the microwave for 20-30 seconds so that its 'runnier' in order to spread over the bundt cake.
    4. Spread the cream cheese icing over the top of the cooled bundt cake and add sprinkles as desired.
