    Peppermint Brownie Pie

    • Freeze the pie crust once you have shaped it in your pie pan for 5-10 minutes, this helps the crust keep its shape
    • Use aluminum foil or a pie crust shield to cover the edges of your pie crust to avoid burning

    Equipment

    Ingredient Notes

    • Wholly Wholesome NEW Organic Pie and Pastry Dough: you can also make your own pie crust, I recommend this recipe
    • All-purpose flour
    • Cocoa powder
    • Granulated sugar
    • Light brown sugar: dark brown sugar can also be used
    • Unsalted butter: if using salted butter, reduce salt by ¼ teaspoon
    • Eggs
    • Vanilla extract
    • Salt: reduce by ¼ teaspoon if using salted butter
    • Andes Peppermint Baking Chips: chopped Andes mints (or another type of mint chocolate) works too

    How to make Peppermint Brownie Pie

    Making this pie can be divided into four easy steps. Skip step one if you are using pre-made pie crust!

    1. Make the pie dough.
    2. Roll out the pie dough.
    3. Make the peppermint brownie filling.
    4. Assemble the brownie pie.

    How to make the pie dough

    My favorite pie crust recipe comes from Sally’s Baking Addiction blog. Click this link to make it yourself! If you are using Wholly Wholesome’s Organic Pie and Pastry Dough, you can skip this step.

    How to roll out the pie dough

    Place the pie dough on to a well floured surface and press it down into a flat circle.

    Add flour to the top of the dough and your rolling pin, then roll the pie dough out, flipping it a few times throughout the process and re-flouring.

    Next, roll the dough into a round circle that will cover your 9-inch pie pan.

    Gently lift the pie dough on to the pie pan and press it down lightly, trimming and crimping the edges as desired.

    I recommend placing the pie crust in the freezer while you prepare the brownie filling. This helps the pie crust keep its shape when it bakes.

    How to make the peppermint brownie filling

    Preheat your oven to 350 degrees.

    In a medium-large mixing bowl, add melted butter, granulated sugar and brown sugar. Whisk together (or using a hand mixer) until combined.

    Add the eggs, vanilla extract and salt and mix until combined.

    Next, add the cocoa powder and carefully mix until all of the powder is covered (this can be messy if done too fast!). Then add the flour and mix until well-combined.

    Add ¾ cup of the peppermint baking chips and fold them into the batter. Reserve the rest for topping.

    How to assemble the brownie pie

    Lastly, remove the pie crust from the freezer and pour the brownie batter into the pie pan. Gently smooth it out until it is evenly covering the pan.

    Sprinkle the reserved peppermint chips over the top of the brownie, then place it in the oven.

    After 15-20 minutes of baking, I highly recommend covering your pie crust with aluminum foil or a pie crust cover to protect it from burning. The crust will bake before the brownie is done.

    Bake for a total of 45-50 minutes, or until a toothpick pricked in the center of the brownie comes out clean.

    Remove it from the oven and allow it to cool, then store it covered at room temperature.

    • ¾ cup unsalted butter melted
    • ¾ cup granulated sugar
    • ½ cup light brown sugar

    • ½ cup cocoa powder
    • 1 teaspoon salt
    • 1 teaspoon pure vanilla extract
    • 1 cup chocolate peppermint baking chips or chopped mint chocolate (*divided)
