These easy monkey bread muffins are made using packaged cinnamon roll dough and just four other ingredients. They are perfectly gooey and delicious!
Quick Tips
- Use these packaged cinnamon rolls – it’s just enough dough to make 12 monkey bread muffins
- Be sure to grease the muffin tin well before use
- Press down the tops of the muffins slightly after baking – this helps make sure all of the pieces stay together (especially if a little bit of filling has leaked out)

- Cinnamon roll dough and icing: I recommend using the Pillsbury 8-pack Cinnamon Rolls (you will need two)
- Butter: salted or unsalted is OK

- Light brown sugar: dark brown sugar is OK

How to Make Easy Monkey Bread Muffins
These easy monkey bread muffins can be broken down into two simple steps!

How to make the cinnamon sugar filling
Melt the butter in a medium mixing bowl, then add all of the filling ingredients to the melted butter (brown sugar, flour and cinnamon).
Use a fork, spoon or hand mixer to incorporate all of the ingredients together. Mix until smooth, then set the bowl aside.
How to assemble the monkey bread muffins
Preheat the oven to 375 degrees and grease a 12 cup muffin tin with baking or cookie spray.
Cut each cinnamon roll into 6 equal pieces and place them in a separate bowl. (NOTE: this can vary if you are not using Pillsbury 8-pack Cinnamon Rolls). See the photo below for reference.
Place 4 cinnamon roll pieces evenly in the bottom of each muffin tin (see photo below for reference).
Evenly spread the filling over the cinnamon roll pieces (it’ll end up being about 1 heaping tablespoon of filling per muffin tin). See the photo below for reference.
Place 4 more cinnamon roll pieces evenly over the top of the filling and lightly press down. See the photo below for reference.
Bake for 12-15 minutes or until the tops have begun to brown. NOTE: some of the filling may leak out of the tops of the muffins and that’s okay. Just press the tops down again lightly after taking them out of the oven.
Scoop the icing that came with the cinnamon rolls into one bowl and microwave it for a few seconds (until it becomes thinner).
Use a spoon to drizzle the icing over the tops of the muffins. Then allow them to cool for 10-15 minutes before removing them from the pan. These are best enjoyed warm!
