I love that this recipe only needs 6 simple ingredients. These are pantry staples you most likely already have on hand! Here are a few notes about some of the ingredients.
- Butter – Use unsalted butter for this recipe. You will need it softened, so take it out of the fridge about 30 minutes before you want to start making these.
- Light brown sugar – Dark brown sugar will also work. Make sure to pack it into the measuring cup for proper measuring.
- Milk – You can use what kind you have on hand here, like whole or skim milk. Even non dairy milk like oat milk will work.
- All-purpose flour – For this recipe you need to “cook” the raw flour so it is safe (and better tasting) to eat.
- Semisweet chocolate chips – Some of these will be rolled into the cookie dough balls, and some will be melted for the melted chocolate coating. You can opt for mini chocolate chips or even dark chocolate. You can also use chocolate almond bark for melting if you prefer, which is usually easier to melt.

How to cook raw flour
While most people are aware of the potential salmonella dangers in eating raw eggs, many overlook the fact that raw flour could also contain dangerous bacteria that could make you sick.
To get around this, you can “cook” the raw flour, killing any bacteria that could be present.
The key to cooking flour is to get it to a temperature of 160 degrees F, which is hot enough to kill off any potentially harmful bacteria. You can do this in the oven or in the microwave.
To cook flour in the oven, spread the flour on a cookie sheet and bake it at 350 degrees F for about 5 minutes.
You can also use the microwave to cook the flour. I prefer this method for this recipe, since you won’t be using the oven for any other purpose.
To cook flour in the microwave, add the amount needed for the recipe in a microwave-safe bowl and heat it on high for 1 minute and 30 seconds, stopping every 15-20 seconds to stir. Heating the flour in intervals and stirring in between is important so that you don’t burn the flour.
Let the flour cool back to room temperature for a few minutes and it will now be safe to add to your cookie dough!
How to make no bake cookie dough truffles
If you love eating raw chocolate chip cookie dough, then you need an edible cookie dough recipe. It is so easy to make these no-bake cookie dough truffles!
First, line a baking sheet with parchment paper or wax paper and set aside.
Next cream the butter. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and brown sugar on high speed for about 1-2 minutes. You can also do this with a mixing bowl and a hand mixer.
Scrape down the sides of the bowl with a silicone spatula once complete.
Stir in milk, vanilla extract, and salt, and mix until combined. Scrape down the bowl again once complete.
Sprinkle in the cooked flour over the wet ingredients in 4 portions, mixing well after each addition.
Using a wooden spoon, mix in 1.5 cups of the chocolate chips.
Use a cookie scoop to make small cookie dough balls and place the dough balls on a baking sheet. Cool in the fridge for 30 minutes to an hour. This will help firm up the cookie dough balls before they are dipped in chocolate.
Right before removing the cookie dough balls from the refrigerator, melt the chocolate for the candy coating. You can do this in the microwave or with a double boiler on the stove.
Tip: If you have trouble keeping your chocolate melted long enough to dip the cookie dough balls, add a little bit of coconut oil to the melted chocolate and mix well.
Remove the cookie sheet from the fridge. Coat the cookie dough balls in melted chocolate. You can do this easily by sticking a fork into the cookie dough balls, and dunking them in the melted chocolate. Allow any excess chocolate to drip off.
Put the chocolate coated truffles back on the cookie sheet in a single layer when done. Refrigerate them again until chocolate sets. This should take about 30 minutes to an hour.
