Skillet Brownie and Chocolate Chip Cookie

This skillet brownie and chocolate chip cookie (brookie) recipe is made with chocolate chip cookie dough and brownie batter spooned together and baked in a cast iron skillet. It is rich and gooey, and is the perfect warm dessert!

This Skillet Brookie is the perfect winter dessert! This fudgy, warm cookie and brownie pairs perfectly with ice cream. It is the best melt-in-your-mouth, rich comfort food.

  • Grease the cast iron skillet with baking spray (Baker’s Joy or PAM baking spray)
  • Bake for 30-35 minutes, or until a toothpick inserted comes out with moist crumbs (but not wet dough)

Ingredient Notes

  • Butter: salted or unsalted, used for the brownie and cookie portion
  • Light brown sugar: dark brown is OK too
  • Granulated sugar
  • Milk: any kind, higher fat content the better
  • Vanilla extract: I always prefer pure extracts! This is used in both the brownie and cookie portion
  • Eggs: used in both the brownie and cookie portions
  • All-purpose flour: used in both the brownie and cookie portions
  • Salt: used in both the brownie and cookie portions
  • Baking soda
  • Chocolate chips: used in both the brownie and cookie portions
  • Cocoa powder: unsweetened

How to make this Skillet Brownie and Chocolate Chip Cookie

This skillet brookie is very easy to make! It just involves separately making chocolate chip cookie dough and brownie batter, then spooning them into a cast iron skillet and baking!

How to make the chocolate chip cookie dough

Preheat the oven to 350 degrees. Use the convection bake setting if you have it. Grease a 11-13″ skillet with baking spray and set it aside.

In a medium-large sized mixing bowl, use a hand or stand mixer to cream together the butter and brown sugar.

Add the milk, vanilla extract and egg. Mix until combined. Scrape down the bowl, then add the salt and baking soda, then mix again until combined.

Add the flour, then mix until combined. Scrape down the bowl once complete.

Finally, fold in ¾ cup of the chocolate chips, reserving ¼ cup for topping the skillet brookie.

Set the dough aside while you make the brownie batter.

How to make the brownie batter

Place the butter in a medium-sized microwave safe bowl and heat it until melted.

Add sugar and use a hand or stand mixer to mix well (for about a minute).

Next, add the melted chocolate, vanilla extract and salt. Mix until combined. Scrape down the bowl.

Add the eggs and mix until combined, then add the flour and cocoa powder and mix again. Scrape the bowl down once complete.

How to assemble and bake the skillet brookie

Use a spoon or a cookie scoop to scoop the cookie dough throughout the greased skillet. Press the dough down.

Use a spoon or a cookie scoop to spoon brownie batter around the cookie dough, filling any empty spaces in the skillet.

Use a spatula or butter knife to even out the brownie batter.

Top the dough with the reserved chocolate chips and bake.

Bake for 32-37 minutes, or until a toothpick comes out with just a few wet crumbs on it (not raw dough or batter).
